Spring Flounder Mugwort Soup &Spicy Snailfish with Bean Sprouts 🔥
Welcome spring with the fragrant Flounder Mugwort Soup and spicy Steamed Snailfish with Bean Sprouts! Discover the islanders' secret to a clear, bitter-free broth and how to perfectly balance the soft, savory texture of snailfish.
📝 Recipe Guide (Servings: 4)
• Prep &Cook Time: 40 mins
• Ingredients (Spicy Snailfish): 1 cubed snailfish, 300g soybean sprouts, 2 green chilies, 4 Tbsp gochugaru, 2 Tbsp minced garlic, 3 Tbsp soy sauce, 2 Tbsp starch slurry (starch + water).
• Instructions (Flounder Mugwort Soup):
• Make the broth with a little bean paste.
• Instead of dried anchovies which taste bitter when boiled for long, put herrings to make a light and delicious broth.
• When the broth boils long enough, add dressed flounders and mugworts.
• Instructions (Spicy Snailfish):
• Make the steamed snailfish with bean sprouts, similar to steamed monkfish.
• Put plenty of hot chili pepper and chili flakes.
• A handful of bean sprouts also go in.
• 👨🍳 Expert Tip: Cook the snailfish in the spicy sauce over medium heat. Towards the end, increase the heat to high, quickly toss in the bean sprouts to maintain their crunch, and stir in the starch slurry to thicken the sauce.
